Fun fact: its name derives from the dialect term “agrillo,” referencing its lively character. Pair dry Grillo with grilled mackerel or Trapani-style couscous, while aged versions suit spicy cheeses like Piacentinu Ennese. Recently, producers have experimented with traditional method sparkling wines, achieving elegance with toasted almond notes.
