Anime Erranti is a red wine from Cantina Di Cato, crafted from 100% Montepulciano grapes. The hand-harvested clusters from the estate’s oldest vineyards are destemmed and left to macerate until the end of spontaneous fermentation, which proceeds slowly thanks to the cool temperatures of late October. During vinification, manual punch-downs are performed several times a day to naturally extract aromas and color. The wine is racked only once fermentation is fully complete.
Unfiltered and unfined, the wine undergoes no stabilization. After fermentation, it rests for 12 months in stainless steel, where it refines naturally through sedimentation and gentle racking.
