Sogni d’Anarchia is a rosé wine from Cantina Di Cato, made from 100% Montepulciano grapes.
The must continues its journey on its own with its native yeasts, in an old, unfilled barrel, without temperature control.
After about 9 months of long and slow fermentation, unclarified and unfiltered, the wine is bottled before the next harvest.
