Domaine Exeterra – The Fresh and Sharp Directness of Alsace

It is Sylvaner as we love it: a white wine of crystalline freshness and immediate drinkability, capable of cutting the palate with its vibrant acidity. Born from 40-year-old vines on sandstone and silty soils, this Sylvaner is the purest and most authentic expression of an all too often underestimated grape variety, which here rediscovers all its nobility and character. A “gros canon”, as they say in Alsace, a real cannon of freshness and personality. A slow 11-hour direct pressing to extract the purest must, and a long 8-month elevage on the fine lees in stainless steel tanks. Unfiltered, unfined, to preserve all the substance and mineral tension. The result is a wine of extraordinary precision, freshness, and depth.

  • Appearance: Pale straw yellow color with greenish reflections, brilliant and luminous.
  • Nose: The olfactory profile is fine and linear. Notes of citrus (lemon, grapefruit), green apple, unripe pear, white flowers, and a subtle herbaceous hint of freshly cut grass emerge. Underneath, a clear mineral vein recalling wet stone and chalk, imparted by the sandstone and silty soils.
  • Palate: The entry is dry, taut, and sharp. The acidity is very lively and sculpts the sip with elegance and precision. The body is light but never mundane, with a sapid persistence that lengthens the finish. Clean, citrusy closure, with a return of fresh almond and a mineral persistence that invites the next sip. A white wine of great freshness and drinkability, a true “gros canon”.
