Decius from Cantina Fongoli is a passito wine made from Sagrantino grapes. The wine undergoes a prolonged fermentation with the grapes’ native yeasts, without temperature control. After 15–20 days of fermentation on the skins, the wine is racked off and fermentation continues in oak barrels, followed by a minimum of 5 years of aging in Slavonian oak. Soft pressing is used. The wine is vinified and bottled with no added sulfur dioxide.
