Dogliasco is a white wine by Iacopo Paolucci, produced from Viognier grapes. The wine undergoes 5-6 hours of skin maceration, followed by aging in stainless steel until spring, with sur lie aging and weekly bâtonnages. It is vinified without the use of chemical enological additives, except for minimal sulfite use, and without filtration.
