Fregellae by Cantina Palazzo Tronconi is a white wine made from Capolongo grapes grown using biodynamic agriculture. The grapes undergo a 20-day maceration on the skins in acacia barrels, followed by 8 months of aging in steel tanks. Both alcoholic and malolactic fermentation occur spontaneously, using only indigenous yeasts, with no stabilization, clarification, or filtration.
