Podere Casaccia – Aliter 2021

The Podere Casaccia farm is located on the hills of Scandicci, a few kilometers from the historic and fascinating city of Florence, it is about 12 hectares of woods, olive trees and vineyards. The south-east exposure of the vines gives the plants a large amount of light which allows excellent phenolic ripening. Land of ancient winemaking tradition in which there are vines that reach almost 60 years. In the vineyard, old clones consisting exclusively of native Tuscan vines, typical vines of the Tuscan tradition with the various Chianti vines confused with each other because they were all vinified together. The new plants were created with these ancient varieties, very different from the current ones, and from other ancient vines recently rediscovered such as Pugnitello and Foglia Tonda. Pruning of the plants one by one by hand, biodynamic preparations and sowing of the “thousand plants” necessary to carry out the green manuring, interventions in the vineyard for the defense of the vine only in a preventive way and with the only use of small quantities of mine sulfur and copper. Spontaneous fermentation with indigenous yeasts, no use of pesticides, herbicides, chemical fertilizers.
