Don Pippunu from Cantina Scirto is a white wine vinified with indigenous grapes of Carricante, Catarratto, Minnella, and Grecanico from ungrafted vines between 80 and 100 years old at an altitude ranging from 650 to 1000 meters. The grapes are hand-harvested and softly pressed, spontaneously fermented without temperature controls or chemical additives. The wine is aged in steel for at least 10 months after a 5-day maceration on the skins.
