If the item you chose is available at our central store, you will receive it within 72-96 hours from your order. If the item is not available, Vini Sud Shop will provide the item from other stores and time will slightly be delayed. Wai (which recalls the sound of wonder) is much more than a simple sparkling wine: it is an explosion of joy and lightheartedness. This bubble, made with 100% Moscato grapes, embodies the philosophy of Tenuta Belvedere: authentic, immediate wines designed to be shared in moments of conviviality and lightness. Obtained from 100% hand-selected Moscato grapes, it ferments spontaneously in concrete tanks with indigenous yeasts. The secondary fermentation in the bottle follows the Ancestral Method in its purest form: no addition of external must; the sparkling process occurs naturally thanks to residual sugars and the mass’s own yeasts. The result is a dry wine, with no added sulfites, featuring fine and lively bubbles, focused entirely on fruit purity and aromaticity.

Vinification Alcoholic fermentation in concrete with indigenous yeasts. Secondary fermentation in the bottle according to the Ancestral Method (without the addition of external must).
Aging Short period in the bottle on the lees before disgorgement.
Serve at 6° – 8° C

Tasting Notes

  • Appearance: Bright straw yellow, with luminous reflections and a fine, persistent perlage.
  • Nose: An intoxicating bouquet of yellow-fleshed fruit (peach, apricot) intertwines with delicate hints of white flowers (jasmine, orange blossom). A fragrance that evokes summer and carefree days.
  • Palate: The sip is fresh, agile, and lively. The bubbles caress the palate, while the aromatic note of Moscato expresses itself in purity, without any heaviness. A dry and clean finish that immediately invites the next sip. Extraordinary drinkability.

Recommended Pairings

Wai is the ideal companion for every convivial moment. Perfect as a sparkling aperitif, it pairs wonderfully with light snacks, olives, chips, and taralli. Excellent with seafood appetizers, raw fish, carpaccio, and summer salads. Its freshness also makes it surprising with sushi, lightly spiced ethnic dishes, and fresh cheeses. A wine to be enjoyed in company, without a care in the world.

The Ancestral Method

Wai is an authentic ancestral wine: refermentation takes place directly in the bottle by exploiting the grape’s natural sugars and indigenous yeasts, without additions of must or selected yeasts. This ancient method yields fine bubbles, a slight cloudiness (typical of unfiltered wines), and a truer, unmanipulated expression of Moscato.
