Loup Noir 2023 is much more than a Pinot Noir: it is the embodiment of a place, its energy, its finesse, and its power. Born from a small parcel of old vines on granitic soil, this wine was vinified with a radical choice: a 15-day maceration with 100% whole bunches, followed by 10 months of elevage in Burgundian barriques. The result is a wine that surprises with its elegance, its freshness, and its ability to go the distance, both in the glass and over time. Fermentation with whole bunches to preserve the integrity of the fruit, a slow 15-day maceration to extract color and structure without violence, and finally a long rest in oak that softens and completes it. Unfiltered, unfined.

Tasting Notes
- Appearance: Bright ruby red color with garnet reflections, clear and luminous.
- Nose: The olfactory profile is complex and layered. Notes of small red fruits (wild strawberry, raspberry, currant), withered flowers (violet, dog rose), and a wild undertone of undergrowth, leather, and spices emerge. The granitic nature of the soil expresses itself in a sharp mineral vein that adds depth and tension. The skillfully dosed oak aging provides slight hints of toast and vanilla.
- Palate: The entry is nimble and fine, with a silky and velvety tannic texture. The acidity is lively and sculpts the sip with elegance, supported by a freshness that enhances the crispness of the fruit. The power emerges in the background, controlled and harmonious. The finish is very long and persistent, with returns of small red fruits and a mineral closure of rare intensity. A Pinot Noir of great elegance and depth, capable of going the distance.

Its finesse and structure make it the ideal companion for feathered game (pheasant, partridge, quail), grilled red meats, roasted poultry, and dishes with sauces. Perfect with soft cheeses with bloomy rinds (Brie, Camembert) and preparations based on porcini mushrooms and truffles.
