Colonna Madama macerated white wine from Vincenzo Nardone winery, an iconic and structured interpretation of Coda di Volpe, coming from a historical cru in Venticano. This territorial white wine is born from a 45-year-old vineyard on sulfurous yellow clays, cultivated with the Organic Forrest philosophy.
The vinification enhances the raw material with a 5-day maceration on the skins. The spontaneous fermentation, using a pied de cuve of indigenous yeasts from ungrafted vines and with no added sulfur, proceeds 60% in barriques and 40% in steel.
The 8-month aging on the lees, with batonnage for the portion in wood, provides complexity and volume. The two batches are then reunited, creating a broad and mineral white wine, where the sapidity of the yellow clays blends with an enveloping texture and vibrant acidity.
