Lapio macerated white wine from Vincenzo Nardone winery is a Fiano of structure and complexity that explores the boundaries of Irpinia’s symbolic grape variety. Born in Lapio from 30-year-old vines cultivated with certified organic agriculture on clay-calcareous soils enriched by volcanic sands. After a short 4-day maceration on the skins in steel, the free-run must completes its spontaneous fermentation entirely in second and third-passage French oak barriques, thanks to a pied de cuve of indigenous yeasts and without added sulfur.
The aging process continues for 11 months on its lees in the same barriques, with continuous lees stirring (bâtonnage), before a brief period in steel and bottling. The result is a broad and enveloping Fiano, unfiltered and unclarified, where the typical minerality of the variety blends with a sensual texture and extraordinary length.
