Essenza white wine from Vincenzo Nardone winery, a Greco of profound mineral expression, born from the historical vineyards of Santa Paolina in Irpinia, originates from 40-60 year old vines, cultivated with the Organic Forrest philosophy and biodynamic practices. Grapes are harvested at full phenolic ripeness, when the clusters take on a characteristic orange color. In the cellar, soft pressing extracts a golden-amber must, which after a short decantation is entrusted exclusively to a pied de cuve of indigenous yeasts from ungrafted vines, without added sulfur. The aging process, lasting one year in steel, is enriched by continuous lees stirring (bâtonnage) for the first three months. This technique, combined with a further two years of aging in the bottle, forges a white wine of extraordinary structure and complexity, unfiltered and unclarified, which encapsulates the essence of a unique terroir.
