Pupo Punk Coda di Volpe and Falanghina by Vincenzo Nardone is a rebellious and authentic natural sparkling white wine, born in Irpinia. It is made from a blend of Coda di Volpe (90%) from 25-year-old vines, and Falanghina (10%) from Organic Forest agriculture with spontaneous cover cropping, no mineral fertilizers, herbicides, or pesticides.
Vinification proceeds with a short maceration for the Coda di Volpe, spontaneous fermentation with pied de cuve, and no addition of sulfur dioxide. Aging for six months occurs partly in barriques (25%) and partly in stainless steel.
The characteristic natural sparkle results from an artisanal bottle refermentation, obtained by adding frozen must from the same vineyard and vintage, activated by the first warm days.
