Barolo Serralunga d’Alba DOCG is a red wine produced by De Simone Winery with Nebbiolo grapes with a spontaneous fermentation lasting approximately 10 days with frequent punch-downs and a delestage at the halfway point of fermentation, maceration on the skins for 25 days, aging in Austrian oak barrels with a capacity of 20/30 hectoliters, additionally, 30% of the wine is aged in second-use barriques for 18 months.
