Don Pippinu from Cantina Scirto is a red wine crafted from indigenous Nerello Mascalese grapes. Handpicked from approximately 80 to 100-year-old vines with their own roots at 700 meters above sea level. Following the harvest, which typically occurs in the first half of October, the grapes undergo spontaneous fermentation in steel tanks and vats for about 10 to 20 days. Subsequently, the must is transferred to steel and/or fiberglass for aging, for a minimum of 12 months, followed by at least 6 months in the bottle before being released for sale.
